Digital cookbook captures Worldchefs Taste of Tradition campaign

New Zealand dairy foodservice brand, Anchor Food Professionals, has partnered with Worldchefs by showcasing 11 globally renowned chefs in their latest Taste of Tradition campaign.

The campaign celebrates culinary creativity and sees the chefs reimagine a traditional dish from their country by giving them a modern dairy twist.

These innovative recipes from around the world have now been brought together in a digital cookbook titled Taste of Tradition.

Among the global chefs is award-winning Chef Amber Heaton, who captained Australia at the 2024 IKA Culinary Olympics in Germany. The young talent has re-envisioned the popular Australian dish, Chicken ‘Parmi’ Parmigiana, to create elevated Chicken Parmigiana Bites on a bed of Napoli sauce topped with green oil and crispy prosciutto.

Amber says, “The Chicken Parmigiana is a crowd-favourite in Australia, found on every pub’s menu. I loved rethinking this classic using Anchor Food Professionals dairy products.

“I started working in a kitchen when I was only 15 years old and instantly fell in love with the industry; it’s afforded me many opportunities I could have only dreamed of as an apprentice. I’m grateful to have been involved in the Taste of Tradition campaign and look forward to representing Australia at the upcoming Worldchefs Global Young Chefs Challenge in Singapore in October,” she adds.

Modern Twist To Kiwi Pavlova

Alongside Amber, New Zealand chef Cameron Davies, whose experience includes being a private chef to celebrities such as Beyonce, Jay Z, Paris Hilton, Bono and Rihanna, has transformed the Kiwi Pavlova with a modern twist, incorporating white chocolate mousse, vanilla whipped mascarpone and strawberry sorbet.

Cameron says, “I developed my love for cooking through my Nana’s passion for food, which quickly became my lifelong love and career. For me, inspiration for dishes comes from sourcing great quality local ingredients, handling them with care and using excellent techniques to create a simple but delicious plate of food, so participating in the Taste of Tradition campaign was a natural fit.”
