New all-day bistro – Trivet – opens tomorrow led by Chef Wallace Mua

Right in the middle of Restaurant Month, Auckland City is set to welcome its latest culinary destination. Neighbouring the prestigious JW Marriott Auckland on Albert Street, Trivet is a vibrant all-day bistro that aims to effortlessly weave into the city’s cultural fabric.

Led by visionary Executive Chef Wallace Mua, who has worked in top kitchens in Marseille and New Zealand, Trivet represents the culmination of a remarkable culinary journey. From humble beginnings as a dishwasher to ascending the ranks to Executive Chef, Chef Wallace’s dedication and talent shine through in every aspect of Trivet.

Drawing inspiration from his diverse kitchen experiences, Chef Wallace has crafted a menu that celebrates Aotearoa’s very best ingredients and subtly fuses his favourite flavours and cooking techniques from around the world. From sustainably sourced seafood to locally sourced produce and house-made delicacies, Trivet promises a culinary experience that pays homage to both tradition and innovation.

“Trivet is more than just a restaurant; it’s a reflection of my personal journey and the influences that have shaped my culinary philosophy,” Chef Wallace explains. “Each dish tells a story, blending flavours and techniques from around the world to create something truly unique.”

At Trivet, diners can expect a feast for the senses, with signature dishes that showcase Chef Wallace’s world-class culinary repertoire. From the vibrant Trevally oka, to the indulgent slow-cooked beef cheek cromesquis, reminiscent of Chef’s time in France, every dish is a celebration of flavour and heritage.   

Trivet First Of Two

Trivet’s interiors have been designed to create a warm and welcoming atmosphere, blending organic textures with contemporary elements. Drawing inspiration from Aotearoa New Zealand’s natural environment and iconic landscapes, Trivet features an earthy palette of greens, neutrals and warm wood tones, connecting diners with the land. Floor to ceiling windows reflect the natural light, seamlessly bringing the outdoors inside and encouraging guests to linger at the all-day bistro as the sun sets. 

With its promise of exceptional cuisine and genuine hospitality led by Chef Wallace and his young, international team, Trivet is poised to become a cherished dining destination in the heart of Auckland City.

Trivet is the first of two new culinary experiences to be presented by JW Marriott Auckland as part of the hotel’s multimillion-dollar transformation.
